Simple Vegan Curry

I do not claim to be an amazing food photographer, but I am damn good at cooking! This vegetable curry served over rice has been my latest obsession. It’s so simple to make and healthy! It is too good not to share! Enjoy!

Ingredients:

  • 1 can chickpeas
  • 1 small white onion, diced
  • 1 yellow pepper, diced
  • 2 cups carrots, sliced
  • 4 cups broccoli, chopped
  • 3 gloves garlic, minced,
  • 1 fresno pepper, diced (optional)
  • 2 cans coconut milk
  • 1.5 tbsp tamari or soy sauce
  • 1/2 tsp curry powder
  • 1/2 tsp turmeric 
  • 1/2 tsp garam masala
  • Salt and pepper to taste

Directions:

  • Add all ingredients to pot and simmer until veggies are tender. Other option is to slow cook on high for 6-8 hours. 
  • Recommended: serve over rice.
